Fairview Center Potato Salad
This is a favorite potato salad recipe here in Monmouth; it's one of the
specialties served at the Fairview Center Church summer ice cream social.

Ingredients:
- 1/4 c. vinegar
- 1/4 c. water
- 1/4 c. sugar
- 1/4 tsp. salt
- dash pepper
- 1 tsp prepared mustard
- 2 eggs, well-beaten
- 1 c. salad dressing
- 4 c. cubed potatoes, cooked
- 2 hard-cooked eggs
- 1 Tbs. minced onion
- 1/4 tsp. celery seed, opt.
Instructions:
- Combine 1st six ingredients. Bring to a boil.
- Reduce heat; gradually beat in well-beaten egg. Cook, stirring
constantly, until slightly thickened, about 5 min.
- Beat in salad dressing.
- Toss together remaining ingredients. Pour on dressing. Toss gently.
Adjust seasoning if it's necessary (more salt and a little cream for extra
creamy and flavorful).
- Refrigerate several hours.
