Pickle Chunks
This is a recipe from Geri Sorensen, our sister-in-law. She is an amazing cook and has a vast store of recipes; unlike most of her recipes, this one is easy to make. Crunchy and delicious. - Jo
Ingredients:
- 42 oz. Polish dill pickles (we also use regular dill pickles)
- 1 cup sugar
- 1 tsp celery seed
- 1/2 cup cider vinegar
- 1/2 cup water
- 1 cup sugar
- 1/4 tsp red pepper flakes
Instructions:
- Drain juice from the dill pickles.
- Cut pickles into 1" chunks and put in large bowl.
- Add 1 cup sugar and celery seed.
- Cover. Let sit overnight.
- Next day - Bring to boil: vinegar, water, 2nd cup of sugar, red pepper flakes, drippings from pickles in bowl.
- Put pickle chunks back in jar and pour liquid over.
- When cool, refrigerate and let set about 1 week.
