Anna Warkentin's Peppernuts
Here's my best recipe for peppernuts, in case you have nothing to do for 3
hours. -Phyllis
Ingredients:
- 3 c. brown sugar
- 1 tsp. cinnamon
- 1 c. dark syrup
- 1 tsp. baking soda
- 1 c. butter
- 1 tsp. ground star anise (I use more)
- 1 c. lard
- flour to make soft dough
- 4 eggs
Instructions:
- Mix all ingredients.
- Chill dough.
- Using plenty of flour, roll a chunk of dough into long, pencil-like
strip. (I put the strip of dough directly on the cookie sheet to cut, to
avoid picking them all up.)
- Cut bits off with sharp knife, scatter on greased cookie sheet.
- Bake at 350' a few minutes, until lightly browned.
