Owen's Pillau Rice
This is another of Owen Thomas's recipe. Reminds me of the meals we had after Field Day, when the Blue and Orange teams battled each other and then, exhausted, made a large circle and the servants served us from large bowls of curry and platters of pillau.
Ingredients:
- Wet rice - 2 cups
- 1/4 lb., butter
- 1 large onion
- 2 cloves, garlic
- 1 tsp., salt
- 1/2 tsp., saffron in 1/2 cup, warm water
- 6 cloves
- 6 cardamoms
- 1 stick, cinnamon
- 1/2 tsp., allspice
- Nuts
- Almonds
- Sultanas
Instructions:
- Fry onion in deep pan with spices. Add rice, tossing lightly - 5 minutes.
- Add saffron with water. Also, salt.
- Add water to cover rice 1 or 2 inches.
- Cook slowly until dry.
