Couscous Tabouli
Good for a light lunch, especially in the summer.
Ingredients:
Couscous:
- 1 1/2 c. dry couscous, rehydrated
(to rehydrate, pour 4 c boiling water over couscous; let stand 5 min until water is absorbed)
- 2 medium tomatoes, chopped
- 4 scallions, chopped
- 1/2 c. diced cucumber
- 1/2 c. chopped celery
- 1 cup minced parsley
Dressing:
- 1/4 c. lemon juice
- 2 Tbsp olive oil
- 1 tsp cumin
- Fresh ground pepper and salt to taste
Instructions:
- Combine the rehydrated couscous with tomatoes, scallions, cucumber, celery and parsley
- Whisk together the dressing ingredients
- Pour dressing over the couscous and serve, or refrigerate until serving time
