Carrot Cake
This is the MOST delicious carrot cake I've ever had; one of our Garfield
teachers makes it once a year and we finish it before the end of our first
break. The frosting is delicious and easy to make. This is for a day when
you don't feel like counting calories. --Jo
Ingredients:
- 2 c. flour
- 2 c. sugar
- 1 1/2 c. oil
- 2 tsp. baking soda
- 1 tsp. salt
- 2 tsp. cinnamon
- 3 c. grated raw carrot
- 4 eggs
- 1 c. chopped walnuts
Instructions:
- Heat sugar and oil and whip while heating.
- Add remaining ingredients; mix well.
- Bake 30-40 min. at 350' in lightly greased 9" x 13" pan.
Frosting:
- 8 oz. cream cheese
- 1 pkg. powdered sugar
- 1 stick butter
- 2 tsp. vanilla
Whip until creamy. Frost cake.
